As the mid-winter chill sets in, a warm, comforting bowl of soup is the perfect remedy, – one TikTok user has shared a simple yet delicious recipe for broccoli and stilton soup that’s sure to become a favourite.
The amateur home cook, who posts under the handle @stopdropandcook, showcased the mouthwatering dish in a recent video, saying: “Continuing with soup season, this is a really tasty and comforting stilton and broccoli soup.” The recipe, which can be found below, has impressed followers, with one commenting: “My favourite soup, I’m going to make this tomorrow.”
Another user wrote: “Just happen to have all the ingredients for this! Making it now.” A third asked, “How many portions does this make? I live on my own – does it keep long in the fridge? Looks phenomenal.” The creator replied: “It will make four to five bowls. Try and eat by the next day, but you can freeze it.”
1. In a large pot, melt the butter over medium heat. Add the diced onion and cook until softened, about 5 minutes.
2. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
3. Add the broccoli florets and cook until they start to soften, about 3-4 minutes.
4. Pour in the chicken or vegetable stock and bring the mixture to a boil.
5. Reduce the heat and let simmer until the broccoli is tender, about 10-12 minutes.
6. Use an immersion blender to puree the soup until smooth, or allow it to cool and puree it in a blender or food processor.
7. Stir in the grated stilton cheese until melted and well combined.
8. Add the heavy cream or half-and-half and season with salt and pepper to taste.
9. Serve the soup hot, garnished with chopped fresh parsley or chives if desired.
