Jamie Oliver’s magic touch has found its way into the kitchen yet again, with a delightfully simple mug cake recipe that’s all the rage for those craving a quick sweet fix. Mug cakes, as you can guess, are the most straightforward concoction – a simple cake batter microwaved in a mug.
This particular gem from Jamie packs a punch with ripe banana and chocolate, making it an ace trick to gobble up that leftover Christmas chocolate stash.
The banana’s use doesn’t make the cake dense—instead, you get something scrumptiously moist and tasty. Jamie Oliver put it best when he described his creation: “I’m bigging up the microwave here to create the easiest, most reliable cake in minutes.
“It’s perfect for those days when you need a warm hug in a mug. Feel free to mix up the flavours.”
Good news if you’re kitting out mugs for a squad – this recipe sorts out four dinky cups or, if like me with chunkier mugs, three will do, reports the Express.
Even though Jamie gives a heads-up of ten minutes from start to finish, I managed to nail it in just shy of three minutes flat.

Firstly, peel the banana and mash it in a bowl, or if you fancy shaving some precious moments, blitz it in a food processor – that’s what I did. Then, add in the flour and a pinch of sea salt, add in the sugar along with a good glug of oil, about four tablespoons, if we’re being precise.
Crack your egg into the mix and then pulse it (or whisk away) until the batter is smooth.
Next, distribute the mixture among four small microwave-safe cups (about 200ml each) or three larger mugs. Break the chocolate bar into pieces and embed them into the mixture.
Then, microwave on high (800W) for a minute, or until it rises and becomes gooey in the middle. I discovered that one minute was just right for this mug cake.
I only microwaved one of the mug cakes, leaving the other two in the fridge for my family to enjoy the following day. Once the cake is ready, take it out of the microwave and let it cool down a bit.
These mug cakes are scrumptious on their own, or you can serve them with a spoonful of yoghurt or custard, or a small scoop of ice cream.
